I’ve seen firsthand that small actions can create huge change. I’ve worked with preschoolers at Urban Arts in Minneapolis to build organic garden beds in an abandoned parking lot. We have taken a public eye soar and turned it into a beautiful space where children can plants seeds and watch beans grow. We also planted an apple tree and garlic beds for winter harvest. I’ve worked with older elementary students to build rain barrels so we are able to feed our garden & I look forward to someday helping to raise chickens at the preschool. It has been an amazing experience working with younger children and helping them see the connection between food and the environment. I plan to go into environmental studies or nutritional medicine and I believe strongly that if we give young children experiences and connections to the earth, they will grow into adults who take better care of our planet.
